Enticing bouquet of fresh pear, biscuit and carmelized apple. With time in glass, warm oak spice and vanilla bean emerge. The satiny mouthfeel on entry leads to a nice lift of citrus fruit that plays against the wine’s richness. Persistent finish with a hint of dried apricot. It’s a beautiful Chardonnay…think you don’t like Chardonnay? Ask for a tasting, and reconsider.
To capture the Green Acre site’s character and nurture superior texture, clusters were pressed straight to barrel without cold settling. The lees were in contact with the wine throughout the aging process. It was bottled unfined and unfiltered, a Chardonnay of finesse with finely balanced weight and structure.
Pairings? Shrimp dishes, vegetable dishes (think the Alsatian Onion Tart) and cheeses (think Garrotxa – see below) pair well with this wine. House-made, made-to-order mozzarella would be a great pairing for this wine, too.
