Finocchiona Fennel Salami

Its name comes from “finocchio”, or fennel, used to flavor the lean pork shoulder and cheek fat used in the sausages. This dry-cured salami is often aged as long as five months to a year to develop its delectable flavor and aroma.

Finocchiona Fennel Salami makes a great companion to bolder and fruit forward wines. The spice in the salami works to make the fruit in the wine pop. Pair fennel salami with a Zin-based blend such as Purple Paradise, or a Petit Syrah to enhance your experience.
